- 2 lb. beef
- 1/4 c. flour
- 1 1/2 Tbsp. salt
- 1/4 tsp. pepper
- 1/4 c. butter
- 1 large onion, diced
- 2 c. diced carrots
- 2 c. diced celery
- 8 medium potatoes
- 3 c. milk
Directions

1Cut meat into 1 1/2-inch cubes.

2Mix flour with seasoning. Dredge cubes of meat in flour mixture.

3Melt butter in kettle. Add onion; cook until tender, but do not brown.

4Add cubes of meat and brown.

5Add enough water to cover meat; simmer about 3 hours, until meat is tender.

6Add more water, if necessary, to prevent burning.

7Peel potatoes and quarter.

8Add carrots, celery and potatoes during last half hour of cooking.

9Add milk to stew (mix milk with flour).

10Cook gently until gravy thickens, stirring to prevent burning.
