  • 3 eggs, separated
  • 1/2 c. sugar
  • 1 tsp. lemon juice or orange juice
  • 1/2 c. self-rising flour

Directions

    Beat egg yolks, sugar and juice together.

    Add flour and mix well.

    Fold in egg whites.

    Use a 16 x 11-inch pan lined with wax paper and oiled well.

    Bake at 350° for about 10 to 12 minutes. Wet dish towel in ice water and squeeze out well.

    Pour cake out on dish towel and roll up in wet towel.

    Put in refrigerator and let cool well.
