Ice Cream Roll

Ingredients

  • 4 eggs, beaten real stiff
  • 1/2 c. flour
  • 1 tsp. cinnamon
  • 2/3 c. sugar
  • 1/2 tsp. baking powder
  • 3 Tbsp. sugar
  • 1/2 tsp. baking soda
  • 1/2 Tbsp. vegetable oil
  • 3 Tbsp. cold water
  • 3 Tbsp. cocoa

Directions

    Beat the eggs, flour, cinnamon, 2/3 cup sugar and baking powder.

    Then add 3 tablespoons sugar, soda, vegetable oil, water and cocoa.

    Put in a jelly roll pan lined with waxed paper.

    Bake at 375° for 15 minutes.

    When done, take out on a tea towel and roll up until cool, then unroll and spread ice cream on it.

    Roll up, wrap in foil and put in freezer.

    We like chocolate mint ice cream!

    Slice to serve.
