- 5 pounds green tomatoes
- 3 cups limes
- 1 teaspoon cloves whole
- 1 teaspoon allspice
- 1 teaspoon celery seeds
- 2 gallons water
- 5 pounds sugar
- 1 teaspoon ginger
- 1 teaspoon cinnamon
Directions

1Slice tomatoes; set aside.

2Add lime to water.

3Stir until dissolved.

4Strain before putting in tomatoes.

5Let tomatoes soak for 24 hours.

6Drain and soak for 4 hours in fresh cold water, changing water every hour.

7Mix all other ingredients and bring to a boil.

8Pour over drained tomatoes.

9Let stand overnight.

10Next morning, put tomatoes into jars.

11Boil the vinegar mixture for 1 hour.

12Then pour over tomatoes and seal.

13Makes 10 pints.
