Ingredients

  • 7 lb. cucumbers
  • 2 c. pickling lime
  • 2 gal. water
  • 2 qt. vinegar
  • 4 1/2 lb. sugar (10 1/8 c.)
  • 1 Tbsp. whole spices
  • 1 Tbsp. mixed spices
  • 1 Tbsp. celery seed
  • 1 Tbsp. whole cloves
  • 1 Tbsp. canning salt

Directions

    Slice cucumbers in strips, removing the seeds.
  2. 2
    Soak 24 hours in lime and water.
  3. 3
    Pour solution off of cucumbers and soak for 3 hours in clean water (be sure you do not pour lime down your drain).

    Combine remaining ingredients and soak cucumbers overnight.

    Boil for 35 minutes.

    Place in canning jars and allow to set.

    A hot water bath may be necessary for jars to seal.
