- 1 c. butter or margarine
- 2 c. sugar
- 2 eggs
- 1 c. cold mashed potatoes
- 1 tsp. vanilla extract
- 2 c. all-purpose flour
- 1/4 c. baking cocoa
- 1 tsp. baking soda
- 1 c. milk
- 1 c. chopped nuts
Directions

1In a mixing bowl, cream butter and sugar until fluffy.

2Add eggs, one at a time, beating well after each addition.

3Blend in potatoes and vanilla.

4Combine flour, cocoa and baking soda.

5Add alternately with milk, blending well after each addition.

6Stir in nuts.

7Pour into a greased 13 x 9 x 2-inch baking pan.

8Bake at 350° for 40 to 45 minutes or until cake tests done.

9Cool on a wire rack.
