  • 1 c. butter or margarine
  • 2 c. sugar
  • 2 eggs
  • 1 c. cold mashed potatoes
  • 1 tsp. vanilla
  • 2 c. all-purpose flour
  • 1/4 c. cocoa
  • 1 tsp. baking soda
  • 1 c. milk
  • 1 c. chopped nuts

Directions

    In mixing bowl, cream together butter and sugar until fluffy. Add eggs, one at a time, beating well after each one. Blend in the potatoes and vanilla. Combine flour, cocoa and soda; add alternately with the milk, blending well after each addition. Stir in nuts. Pour into greased 13 x 9 x 2-inch pan. Bake at 350° for 40 to 45 minutes.
