Ingredients

  • 3 whole Chicken Breasts, Boneless, Skinless
  • 1 cup Balsamic Vinegar
  • 3 Tablespoons Olive Oil, Divided
  • 1/2 whole Red Onion, Diced
  • 1 clove Garlic
  • 1 pint Cherry Tomatoes
  • 1 pound Pasta, Any Variety, Cooked
  • 1 cup Fresh Basil Leaves, Slightly Chopped, Add More To Taste
  • 1/2 cups Cardini's Ceasar Dressing, Add More To Taste
  • Cracked Black Pepper, To Taste
  • 3/4 cups Grated Parmesan Cheese

Directions

    Cut chicken into chunks and place in an oven-proof dish.

    Mix balsamic vinegar and 2 tablespoons olive oil and pour over the chicken to cover.

    Marinate at least 1-2 hours.

    Bake at 350 degrees F for about 20 minutes or until its almost done.

    Remove from the oven.

    In a large sauce pan, add onion and garlic to the remaining olive oil.

    Cook about 2 minutes, until onions begin to soften.

    Add tomato and chicken and cook 1 minute.

    Remove from heat, add pasta, basil, and 1/2 cup dressing.

    Stir to coat and add more dressing to taste.

    Sprinkle with pepper.

    Stir in Parmesan cheese, and serve.
