Ingredients

  • 1 c. yellow corn meal
  • 1/2 tsp. soda
  • 3/4 tsp. salt
  • 2 eggs, well beaten
  • 2 garlic cloves
  • 1 can yellow creamed corn
  • 1 scant c. milk
  • 1/2 c. bacon drippings
  • 1/2 lb. grated Colby cheese
  • 2 jalapeno peppers, sliced
  • 1 small onion

Directions

    Mix ingredients except cheese and bacon drippings.

    Pour half of bacon drippings in mixture and the other half in skillet.

    Pour half of mixture in skillet, then sprinkle with cheese.

    Add rest of mixture, then top with remaining cheese.

    Preheat oven to 350°. Bake 45 minutes.

    Let set 30 minutes before serving.
