Ingredients
- 2 Tbsp. butter
- 1/4 c. finely chopped onions
- 1 c. converted rice
- 1 1/2 c. fresh or canned chicken broth
- 1/4 c. golden raisins
- 1 tsp. grated lemon
- 1 bay leaf
- 1/4 tsp. Tabasco
- 1/2 tsp. steam saffron
- salt and freshly ground pepper
Directions

1In a heavy saucepan with a tight fitting lid, melt 1 tablespoon of butter and add onions.

2Cook, stirring until wilted. Add rice and cook, stirring about 30 seconds.

3Add broth, raisins, lemon, bay leaf, saffron, Tabasco, salt and pepper. Bring to a boil.

4Simmer over low heat for 17 minutes.

5Uncover and remove bay leaf.

6Add remaining butter and stir to fluff the rice well.

7Yield: 4 servings.
