Indian Split Pea Soup

Ingredients

  • 2 cups yellow split peas
  • 8 cups water or 8 cups stock
  • 2 tablespoons sunflower oil
  • 1 cup diced onion
  • 1 12 tablespoons minced garlic
  • 1 tablespoon minced fresh ginger
  • 1 12 cups chopped kale
  • 12 teaspoon ground cumin
  • 14 teaspoon ground coriander
  • 12 teaspoon turmeric
  • 18 teaspoon cayenne pepper
  • 1 teaspoon salt

Directions

    Wash peas.

    Add water or stock in a soup pot.

    Bring to a boil and cook on low heat for 45 minutes, half covered with lid, stirring occasionally.

    Heat the oil in a fry pan and saute the onions, garlic and ginger until lightly browned and tender.

    Add to split peas along with all of the remaining ingredients.

    Lower heat and simmer, cover and continue to cook 30 minutes longer, stirring occasionally.
