  • 1 can cream corn
  • 3/4 c. milk
  • 1/3 c. melted Crisco
  • 2 eggs, slightly beaten
  • 1 c. corn meal
  • 1/2 tsp. soda
  • 1 tsp. salt
  • 1 (4 oz.) can chopped green chilies
  • 2 c. grated cheese, divided

Directions

    Mix corn, milk, Crisco, eggs, corn meal, soda and salt well. Pour half the batter into a 9 x 9-inch greased pan. Spread chilies over batter. Sprinkle 1 cup grated cheese over chilies. Pour remaining batter on top. Sprinkle with additional 1 cup grated cheese. Bake at 350° for 40 minutes.
