- 3 pounds irish moss fresh
- 1 cup sugar
- 1 cup juice
- 1/2 lemon
Directions

1Rinse moss in fresh water to remove all traces of salt.

2Chop fronds into small 1 to 2-inch pieces and place into a saucepan with 2 quarts of boiling water.

3Cook till water begins to thicken.

4Remove from heat, strain juice.

5Add sugar and Mix together in a saucepan and add lemon juice.

6Bring to a boil while stirring constantly. Boil for 1 full minute, then pour into hot, sterile jars and seal.
