- 1 1/2 c. all-purpose flour
- 2 c. whole wheat flour
- 1/2 c. quick cooking Irish oatmeal
- 1 1/2 Tbsp. sugar
- 1 Tbsp. salt
- 1 tsp. baking soda
- 3/4 tsp. baking powder
- 1 1/2 c. buttermilk
- 1 egg, lightly beaten
- 3 Tbsp. cold unsalted butter, cut into bits
Directions

1Mix dry ingredients well and blend in the unsalted butter until mixture resembles meal. In a bowl, combine the buttermilk and lightly beaten egg.

2Stir this mixture into the flour mixture and form into a ball.

3Knead the dough lightly on a floured surface until it is smooth.

4Transfer it to a buttered baking sheet and form it into an 8-inch round.

5Cut a 1/2-inch deep X in the center of the loaf with a shape knife dipped in flour.

6Cut should come to within 1-inch of edges.

7Bake in a preheated oven at 350° for 1 hour.

8Transfer to a rack and serve warm or at room temperature.
