  • 3 lb. neck of lamb
  • 3 onions
  • 8 potatoes
  • salt and pepper
  • 2 c. water
  • 1 Tbsp. chopped mixed herbs
  • 2 Tbsp. chopped parsley

Directions

    Trim excess fat from meat; cut meat into small pieces.

    Peel and slice onions and potatoes, making thick slices.

    Layer sliced potatoes on bottom of casserole.

    Add layer of lamb and layer of onions.

    Sprinkle seasonings and herbs over the top; top off with potato slices.

    Add water.

    Cook at 350° for 1 1/2 hours, or until tender.
