- 1 c. corn meal (sifted)
- 1 c. flour (sifted)
- 4 tsp. baking powder
- 2/3 tsp. salt
- 2 Tbsp. sugar
- 2 eggs
- 1 c. milk
- 4 Tbsp. Mazola oil
Directions

1Mix flour, corn meal, salt, baking powder and sugar.

2Mix milk, beaten eggs and oil.

3Add to dry mixture.

4Mix thoroughly; beat several strokes.

5Well oil an iron skillet; heat on medium heat and pour in batter.

6Bake in preheated 435° oven for 20 to 25 minutes. This batter may also be cooked in well-oiled muffin pans.

7Bake muffins 20 minutes.
