- 1/2 c shortening
- 2 c yellow corn meal
- 1 tsp salt
- 1/2 tsp baking soda
- 2 T sugar or 2 packages Sweet & Low
- 1 1/3 c boiling water
- 1 c buttermilk
- 2 eggs, beaten
- 1 T baking powder
Directions

1Preheat oven to 450°.

2Put shortening in 9 inch iron skillet. Heat in oven because skillet must be very hot when batter is put into it.

3Mix corn meal, salt, soda and sugar in bowl.

4Add boiling water to coat the meal (improves texture).

5Add buttermilk, eggs and baking powder.

6Mix well.

7Remove hot skillet from oven, pour excess melted fat into batter, mix again quickly and pour batter into hot pan.

8Bake 20-25 minutes.

9Brown top quickly under broiler.
