Ingredients

  • 6 yams, peeled and cubed
  • 1 -2 cup sweetened coconut milk
  • 12 cup dark rum
  • 12 cup butter
  • 1 -4 cup evaporated milk
  • salt and pepper
  • grated nutmeg

Directions

    Place yams in dutch oven and cover with water.

    Bring to boil and cook yams until soft, about 45 minutes.

    Drain.

    Mash with potato masher or large fork.
  5. 5
    Add sweetened coconut milk, rum, butter, evaporated milk, salt and pepper.

    Stir well until all ingredients are combined and smooth.

    Grate fresh nutmeg over potatoes, fold into mixture.
  8. 8
    Grate more nutmeg on potatoes and fold into mixture again.
