Ingredients
- 2 1/2 c. grape tomatoes, cut in half or cherry tomatoes, cut in fourths
- 1/3 c. green olives with pimento, sliced
- 1 small clove garlic, minced
- 1/3 sweet onion, finely minced
- 1/2 Tbsp. balsamic vinegar
- 2 stalks celery, diced
- 1/4 c. pitted black olives, sliced
- 1/4 c. parsley, minced
- 1 large carrot, julienned
- 1 Tbsp. virgin olive oil
- salt and pepper to taste
Directions

1Combine all ingredients in large bowl.

2Taste and correct seasoning if needed.

3Let stand at room temperature about 30 minutes (longer if desired to attain best taste).

4Serve on grilled (or toasted) sliced Italian or French bread (slice bread about 3/4-inch thick).
