  • 2-1/2 qt. red onions, coarsely chopped
  • 1/2 cup olive oil
  • 1 qt. orange juice
  • 1 qt. plum tomatoes, diced Safeway 1 lb For $1.29 thru 02/09
  • 2 cups golden raisins
  • 1 cup roasted red peppers, diced
  • 1 cup roasted yellow peppers, diced Target 1 pkg For $2.99 thru 02/06
  • 2 Tbsp. canned chipotle peppers in adobo sauce, diced
  • 1 qt. canned mandarin oranges, drained, diced
  • 1 cup orange marmalade
  • 3-1/3 cups A.1. Thick & Hearty Steak Sauce
  • 6 Tbsp. sherry vinegar
  • 6 Tbsp. Italian parsley, chopped
  • to taste kosher salt

Directions

    Cook onions in hot oil in large saute pan 10 to 15 min.

    or until caramelized, stirring occasionally.

    Stir in orange juice, tomatoes and raisins; cook 10 min.

    or until mixture is reduced by one-third.

    Add all remaining ingredients except vinegar, parsley and salt; mix well.

    Reduce heat to low; simmer 10 to 15 min.

    or until thickened.

    Remove from heat.

    Stir in remaining ingredients.
