- 4 skinned and boned chicken breast halves
- 1 large onion, sliced and separated into rings
- 1 large bell pepper, cut into strips
- 1 Tbsp. dried Italian seasoning
- 2 Tbsp. vegetable oil
- 2 large tomatoes, peeled and cut into wedges
- 1/2 tsp. salt
- 1/4 tsp. pepper
- hot cooked rice
Directions

1Cook first 5 ingredients in a large skillet over medium heat, stirring constantly, 5 minutes.

2Add tomatoes, salt and pepper. Cover.

3Reduce heat and simmer 5 minutes.
