  • 2 full chicken breast cutlets, cut into 1 x 1-inch pieces
  • 1/2 c. butter
  • 1 c. Italian bread crumbs
  • 4 beaten eggs
  • 1 c. fresh mushrooms, sauteed
  • Muenster cheese (as much as you like)
  • 1/2 c. chicken broth

Directions

    Soak chicken in beaten eggs for 1 hour.

    Gently roll pieces in bread crumbs. Fry in batter until browned.

    Put in casserole. Cover with mushrooms and broth. Top with thinly sliced cheese. Bake at 350° for 30 minutes. Serves 4.
