Ingredients
- 4 eggs, slightly beaten
- 1/8 tsp. garlic powder
- 1/4 tsp. fresh oregano
- 1/8 tsp. ground black pepper
- 1/4 c. chopped red pepper
- 1/4 c. broccoli flowerets
- 1/4 c. alfalfa sprouts (optional)
- 1/4 c. sliced mushrooms
- 2 oz. (1/2 c.) shredded cheese of your choice
Directions

1Combine first 5 ingredients in bowl and mix well.

2Coat a medium nonstick skillet with cooking spray.

3Saute red pepper and broccoli for 2 to 3 minutes.

4Remove mixture from skillet and set aside.

5Add egg mixture to skillet and cook over low heat until set.

6Do not stir.

7Top with cooked vegetable mixture, alfalfa sprouts and mushrooms.

8Sprinkle with shredded cheese.

9Cover tightly and let stand off stove for 3 to 5 minutes until cheese melts.

10Serves 2.
