  • 2 tsp. olive or vegetable oil
  • 1 c. onion
  • 1 c. shredded carrots
  • 1 c. broccoli
  • 1/4 c. green pepper
  • 2 c. cooked spiral macaroni
  • 2 tsp. red wine vinegar
  • 1/4 c. fat-free Italian dressing

Directions

    In a nonstick skillet, heat oil.

    Add onion, carrots, broccoli and green pepper.

    Cook about 5 minutes, until onion is tender. Add macaroni to nonstick skillet and stir.

    Add vinegar and fat-free Italian dressing.

    Reduce heat and cook on low for about 2 to 3 minutes.
