- 1 lb. sweet or hot sausage
- 2 green peppers, chopped
- 1 onion, chopped
- 1 small pkg. mushrooms, sliced
- 2 (16 oz.) cans stewed tomatoes
- 2 c. bite size zucchini and summer squash
Directions

1Saute sausage (without casing) in olive oil.

2Add peppers, onion and mushrooms.

3Saute until onion is translucent and other vegetables are tender.

4Pour sauteed mixture into large saucepan. Add stewed tomatoes and squash.

5Simmer until squash is tender. Serve over rice or pasta or with Italian bread.
