- 2 tablespoons olive oil
- 1 cup fresh mushrooms, thinly sliced
- 1 medium zucchini, thinly sliced
- 1 small red onion, thinly sliced into rings
- 14 teaspoon dried oregano
- 14 teaspoon marjoram
- 12 teaspoon dried basil
- 18 teaspoon dried sage
- 1 teaspoon garlic, chopped
- 2 medium tomatoes, cut into about 10 wedges each
- 1 cup mozzarella cheese, grated (I use low fat cheese)
- salt and pepper (optional)
Directions

1In a large skillet, heat oil over medium heat.

2Add mushrooms, zucchini, onion, spices and garlic.

3Stir occasionally for about 5 minutes.

4Season with salt and pepper now if you're going to.

5Add tomatoes, and sprinkle with grated cheese.

6Cover skillet with a lid and continue cooking on low heat until cheese is melted, (about 4 minutes.
