- 2 lb. carrots, peeled and sliced diagonally
- 1 Tbsp. minced garlic
- salt to taste
- 1/2 c. sliced black olives
Directions

1Heat skillet to a moderate to high heat; add olive oil.

2Add carrots; stir regularly and cook 10 minutes.

3Add garlic and salt. Cook 10 minutes over low heat.

4Add olives; stir.

5Serve at room temperature.
