Italian Tomato Pie

  • 2 Tbsp. basil
  • 5 Roma tomatoes (can use more)
  • 4 cloves garlic
  • 1 1/2 c. Mozzarella cheese
  • 1/4 c. Parmesan cheese
  • 1 tsp. pepper
  • 1/2 c. mayonnaise
  • 1 pie crust

    Bake pie crust 10 minutes at 350°. Remove and sprinkle 1/2 cup Mozzarella in bottom; let melt as it cools. Cut tomatoes in wedges and drain on paper towel. Chop garlic. Mix remaining Mozzarella, Parmesan and mayo. Place wedges in crust, sprinkle garlic, then basil on top of tomatoes. Smooth mayo mixture over all. Bake at 350° for 35 minutes until brown and bubbly.
