- 1 (10 oz.) pkg. frozen chopped spinach
- 1 c. Ricotta cheese
- 1/2 c. grated Parmesan cheese
- 1 Tbsp. instant minced onion
- 1/2 tsp. oregano
- 1/4 tsp. salt (optional)
- 1 egg, beaten slightly
- 10 cooked Easy Crepes
- 1/2 c. finely chopped pepperoni
- sour cream (optional)
Directions

1Thaw spinach.

2Squeeze dry.

3Mix in Ricotta, Parmesan, onion, oregano, salt and egg.

4Line greased muffin pans or custard cups with cooked crepes (recipe in Breads, Rolls & Pastries).

5Sprinkle pepperoni in bottom of each.

6Spoon about 3 tablespoons cheese-spinach mixture into each crepe cup.
