- Butter, To Cook Eggs
- 6 whole Eggs
- 1/4 cups Milk
- Salt And Pepper, to taste
- 4 whole Tortillas (fajita Style)
- 1 cup Monterey Jack Cheese, Shredded
- Olive Oil
- Sour Cream And Salsa, To Serve
Directions

1Whisk eggs and milk in bowl. Melt some butter in a pan. Once melted, add egg and milk mixture. Scramble your eggs and add salt and pepper.

2Heat oven to 350 degrees. Place two tortillas on a cookie sheet. When eggs are cooked, divide in half and place on tortillas.

3Sprinkle cheese on top of eggs. Place the last two tortillas on top of cheese. Spread a little olive oil over the top of the tortillas. Place in oven and bake for 10 minutes or until golden. Cut quesadillas into four and serve with sour cream and salsa!
