- 1/2 lb. bacon
- 1/2 c. flour
- 3 tsp. baking powder
- 1 tsp. sugar
- 3/4 tsp. salt
- 1 1/2 c. cornmeal
- 1 egg, beaten
- 3 Tbsp. butter
- 3/4 c. milk
- 1/2 c. Mexicorn
- 1/2 c. green chilies
Directions

1Fry bacon, save drippings.

2Combine dry ingredients and mix well.

3Add egg, butter and milk to dry ingredients.

4Then add corn, chilies and bacon to mixture.

5Mix.

6Batter should be stiff. Add 2 tablespoons bacon drippings to skillet, then heat for 1 minute.

7Add mixture to skillet and bake at 400° for 20 to 25 minutes, until golden brown.
