  • 2 large eggs, lightly beaten
  • 1 stick butter or margarine
  • 1 c. whole milk
  • 1 c. all-purpose flour
  • 1 c. stone-ground corn meal
  • 1 Tbsp. sugar
  • 2 Tbsp. baking powder
  • 1 Tbsp. salt
  • 2 c. corn (frozen or fresh)
  • 1 medium jalapeno chili pepper, finely chopped

    Preheat oven to 400°. Grease bottom of a 12-inch iron skillet. In a medium bowl, mix eggs, butter and milk. Add dry ingredients. Add corn and jalapeno last. Bake 20 to 25 minutes until golden brown.
