Ingredients
- 1 c. yellow cornmeal
- 2 eggs, beaten
- 1/4 c. low-fat oleo, melted
- 1 c. cream-style corn
- 1 lb. sausage, cooked, drained and crumbled
- 2 to 3 jalapeno peppers, chopped fine
- 1 c. milk
- 3/4 tsp. salt
- 1/2 tsp. soda
- 1 large onion, chopped
- 1 lb. yellow cheese, grated
Directions

1Mix cornmeal, salt and soda.

2Add eggs, corn, milk, oleo, onion and peppers.

3Mix well, then add sausage and cheese.

4Pour into a 13 x 9-inch greased pan or casserole dish.

5Cook for 20 to 30 minutes at 400° uncovered.

6Makes at least 10 servings.
