Ingredients

  • 1 c. yellow cornmeal
  • 2 eggs, beaten
  • 1/4 c. low-fat oleo, melted
  • 1 c. cream-style corn
  • 1 lb. sausage, cooked, drained and crumbled
  • 2 to 3 jalapeno peppers, chopped fine
  • 1 c. milk
  • 3/4 tsp. salt
  • 1/2 tsp. soda
  • 1 large onion, chopped
  • 1 lb. yellow cheese, grated

Directions

    Mix cornmeal, salt and soda.

    Add eggs, corn, milk, oleo, onion and peppers.

    Mix well, then add sausage and cheese.

    Pour into a 13 x 9-inch greased pan or casserole dish.

    Cook for 20 to 30 minutes at 400° uncovered.

    Makes at least 10 servings.
