- 1 1/2 c. self-rising cornmeal
- 2 eggs
- 1 can creamed corn
- 1 c. buttermilk
- 1/2 c. oil
- 1 onion, chopped
- 1 1/2 c. Cheddar cheese, grated
- 1 jalapeno pepper, chopped fine
Directions

1Mix all ingredients together very well. Grease and heat skillet or pan that you use to cook the cornbread. Sprinkle the skillet or pan with a small amount of cornmeal. Pour mixture into skillet or pan and bake at 350° for 45 minutes or until done.
