  • 1 1/2 c. self-rising cornmeal
  • 2 eggs
  • 1 can creamed corn
  • 1 c. buttermilk
  • 1/2 c. oil
  • 1 onion, chopped
  • 1 1/2 c. Cheddar cheese, grated
  • 1 jalapeno pepper, chopped fine

Directions

    Mix all ingredients together very well. Grease and heat skillet or pan that you use to cook the cornbread. Sprinkle the skillet or pan with a small amount of cornmeal. Pour mixture into skillet or pan and bake at 350° for 45 minutes or until done.
