- 2 jalapeno chilies, finely chopped
- 1 - 16 oz. can creamed corn
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 Tbsp. sugar
- 2 eggs
- 3/4 c. buttermilk
- 1/3 c. oil
- 1 c. grated longhorn cheese
- 2 c. yellow cornmeal
Directions

1Preheat the oven to 350°.

2Grease a 9 x 13 baking pan.

3In a large bowl, mix jalapenos and creamed corn.

4Beat in the baking soda, salt, sugar, and eggs (beating well).

5Add the buttermilk, oil, cheese, and cornmeal.

6Mix well.

7Pour the batter into the greased pan and bake for 35 minutes or until golden brown.

8Serve it hot with butter!
