Jalapeno Cornbread

Ingredients

  • 3 c. cornmeal
  • 2 1/2 c. milk
  • 1/2 c. salad oil (vegetable oil)
  • 3 eggs
  • 1 large onion, chopped
  • 2 Tbsp. sugar
  • 1 can cream-style corn
  • 1/2 c. finely chopped jalapeno (fresh or canned)
  • 1 1/2 c. sharp cheese, shredded
  • 1/4 lb. bacon, cooked and crumbled
  • 1/4 c. pimientos, chopped
  • 1/2 clove garlic, chopped fine

Directions

    Put cornmeal in large bowl, add milk and eggs and stir well. Add all other ingredients as given in order.

    Bake in 3 greased 8 x 8 x 2-inch pans at 400°, about 35 minutes or until done.

    Can also be baked in muffin pans.
