Ingredients

  • 1 c. shortening
  • 2 c. sugar
  • 3 c. plain flour
  • 4 eggs
  • 1 c. buttermilk or 2 Tbsp. vinegar plus milk to make 1 c.
  • 1 tsp. soda
  • 1/4 tsp. salt
  • 1 tsp. nutmeg
  • 1 tsp. cloves
  • 1 tsp. allspice
  • 1 c. blackberry jam
  • 1 c. broken nuts

    Cream shortening and sugar.

    Add eggs and beat until light and fluffy.

    Mix together flour, salt, nutmeg, cloves and allspice. Mix soda well with the buttermilk.

    Add these two mixtures to the creamed shortening and sugar alternately, starting and ending with flour mixture.

    Add jam and nuts.

    Pour into tube pan that has been greased and floured.

    Bake at 350° for 1 hour.
