- 2 eggs
- 1/2 cup sugar
- 1/3 cup melted butter
- 2/3 cup milk
- 1 3/4 cups all purpose flour
- 1 Tbsp. baking powder
- 1 tsp. grated lemon peel
- 1/2 tsp. salt
- Jam - flavor of your choice
Directions

1Mix eggs, sugar, melted butter and milk.

2Add flour, baking powder, lemon peel and salt. Blend well.

3Use 12 count muffin tin lined with paper cupcake holders.

4Fill with 1/2 the batter, add a tablespoon of jam, then add batter to fill cup.

5Bake at 400° for 20 to 25 minutes.
