- 3/4 cup butter or shortening, softened
- 1/2 cup brown sugar
- 1/2 cup corn syrup, light or agave
- 2 large eggs
- 1 tablespoon lemon zest
- 3 cups flour, all-purpose
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 1/2 cups fruit jam or jelly, any kind, apricot works well
Directions

1In a medium bowl, cream together the butter and brown sugar.

2Beat in the eggs, corn syrup and lemon zest.

3In another bowl sift or whisk together the flour, baking soda, baking powder and salt.

4Add the wet ingredients to the dry and stir together until combined.

5Refrigerate until ready to use.

6Roll out the dough on a well floured surface fairly thin and cut out rounds with a cookie cutter.

7Place on an ungreased baking sheet and bake at 375F (190C) F for 8 minutes.

8Transfer to a wire rack to cool.

9Once the cookie are cool, place a teaspoon of your favorite jam or jelly onto the bottom of one of the cookies and top with another one.
