- 1 c. uncooked rice
- 1 (16 oz.) can stewed tomatoes
- 1 lb. sausage
- 2 1/2 to 3 lb. chicken pieces
- 1 lb. or more cleaned baby shrimp
- 1 large clove garlic
- canned chicken broth
- 1/4 tsp. dried thyme leaves
- salt and pepper
- cayenne red pepper
- 1 large onion
- chopped celery or green pepper (optional)
- diced ham (optional)
Directions

1Fry sausage; drain and cut in bite size pieces.

2Saute onion, celery and pepper in drippings until tender.

3Add broth, tomatoes, seasoning, chicken and sausage.

4Bring to a boil and add rice. Cover and simmer 25 minutes.

5Add shrimp during last 5 to 10 minutes.
