- 1 lb. chaurice
- 1 lb. andouille
- 1/4 c. diced tasso
- 1 onion, chopped
- 3 stalks chopped celery
- 3 c. raw rice (long grain)
- 1 lb. can whole tomatoes
- 6 c. stock or water
- 1 clove garlic
- 2 tsp. thyme
- 1 bay leaf
Directions

1Saute the fresh sausage until browned.

2Add smoked meats, celery, onion and bell pepper.

3Saute until translucent.

4Add rice and saute until rice turns milky white.

5Add remainder of ingredients and bring to a boil.

6Cover and reduce to a simmer. Cook without stirring for 25 minutes.

7Taste check for seasoning and toss in green onions.

8Cook for 5 minutes more before serving.
