Janis' Marinated Vegetables

Ingredients

  • 1 can cut green beans, drained
  • 1 can LeSueur peas, drained
  • 1 can water chestnuts, sliced and drained
  • 1 small can pimentos, chopped
  • 1 c. celery, chopped
  • 1 large onion, cut in rings
  • 1 c. sugar
  • 1 c. vinegar (not white)
  • 1/4 c. water
  • 1 bell pepper, cut in rings
  • 1 cucumber, unpeeled, cut in half and sliced
  • 1/2 c. salad oil
  • salt and pepper to taste

Directions

    Combine all ingredients.

    Cover and marinate for 24 hours. Drain.

    Reserve some of liquid in the event some of vegetables are left over.

    Store in refrigerator in closed Tupperware container. Will keep for several weeks.
