  • 1 lb beef, pork, or chicken, cubed
  • 4 carrots, peeled, cut into 1 inch pieces
  • 2 celery stalks, peeled, cut into 1 inch pieces
  • 2 large potatoes, cubed
  • 1 large onion, chopped
  • 1 large bell pepper, chopped
  • 6 quarts water
  • Short-grain rice, to taste
