Ingredients

  • 22 pounds Tomatoes
  • 3 pounds Onions
  • 15 whole Hot Peppers, Your Choice
  • 5 whole Bell Peppers
  • 2 cans Tomato Paste (large Cans)
  • 2 cups Vinegar
  • 1 cup Sugar
  • 6 Tablespoons Paprika
  • 6 Tablespoons Chili Powder
  • 6 Tablespoons Cumin
  • 1 Tablespoon Garlic Powder

Directions

    Peel and chop tomatoes, onions and peppers...(onions and peppers I do in food processor).

    Combine with remaining ingredients and cook till boiling.

    Pour into jars and seal. This makes about 12 or so quarts of salsa.

    Recipe calls for 1/2 bushel of tomatoes, which is 20 -22 lbs
