  • 1 cup sugar
  • 4 eggs
  • 12 cup boiling water
  • 12 teaspoon salt
  • 1 12 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon lemon extract or 1 teaspoon vanilla
  • favorite jelly
  • whipped cream

Directions

    Preheat oven to 400.

    Beat eggs and sugar until light and thick.

    Add flour, salt, baking powder and flavoring.

    Rapidly whip boiling water into batter.

    Pour the mixture onto a cookie sheet fitted with wax paper and sprayed with non-stick cooking spray.

    Bake 10-12 minutes.

    Turn out onto a cloth which has been ran under cold water and wrung out.

    Spread with your favorite flavor of jelly.

    Using a damp cloth, roll up the cake.

    Garnish with whipped cream.
