- 1 lb. boneless pork, cut into 3/4-inch cubes *
- 1 Tbsp. taco seasoning mix
- 2 tsp. vegetable oil
- 18 oz. chunky style salsa
- 1/3 c. peach preserves
Directions

1Coat pork with taco seasoning.

2Heat oil in large nonstick skillet over medium heat.

3Add pork and cook until brown.

4Add salsa and preserves to pork.

5Cover and simmer on low heat for approximately 30 minutes.

6Serve over a bed of rice.
