Ingredients

  • 1 1/2 c. raisins
  • 1/4 c. water
  • 1/2 c. shortening
  • 1/2 c. sugar
  • 1 egg, well beaten
  • 1/2 tsp. soda
  • 1/2 tsp. hot water
  • 1/2 c. thick applesauce
  • 1 1/2 c. flour
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 1 1/4 c. gumdrops (not licorice or green), cut into small pieces
  • 1/2 c. chopped nuts

    Simmer raisins and water for 3 minutes, just until water is absorbed.

    Cream shortening with sugar.

    Blend in egg.

    Dissolve the soda with the hot water, add this to applesauce and blend into creamed mixture.

    Sift together flour, nutmeg, cinnamon and salt. Add in gumdrops and nuts.

    Blend this into creamed mixture; add cooled raisins.

    Pour into greased and lined (3 thicknesses of wax paper) loaf pans.

    Bake at 300° for 1 3/4 hours.

    Cut when cool.
