  • 2 c. dried apricots
  • 1 1/2 c. pitted dates
  • 1 c. red and green maraschino cherries
  • 1 1/2 c. Brazil nuts
  • 1 c. red and green candied pineapple, cut up
  • 3/4 c. all-purpose flour
  • 3/4 c. sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 eggs
  • 1 1/2 tsp. vanilla

    Preheat oven to 300°.

    Line a loaf pan, 9 x 5 x 3-inch, or 8 1/2 x 4 1/2 x 2 1/2-inch, with wax paper or aluminum foil (grease).

    Mix all ingredients; spread in the pan.

    Bake for about 1 3/4 hours or until a wooden pick inserted in center comes out clean.

    Remove from pan; cool.

    Wrap in plastic wrap; store in refrigerator.
