- 1/3 c. butter
- 1/4 c. flour
- 2 1/2 c. milk
- 1/2 c. whipping cream
- 1/2 lb. lump white crabmeat
- 1 tsp. simple syrup or sugar
- 1/2 tsp. salt
- 1/8 tsp. cayenne pepper
- 2 Tbsp. chopped green onions
Directions

1In a heavy skillet, melt butter; stir in flour.

2Stir constantly while cooking on very low heat (cook about 2 minutes); don't brown.

3Gradually add milk, stirring until smooth.

4Add remaining ingredients (all except crabmeat) and cook 3 to 4 minutes on low heat, until thickened (consistency should be that of potato soup).

5Add crabmeat and simmer 5 minutes.

6Garnish each serving with a parsley sprig.

7Yields 4 cups.
