- 1 quart Water
- 1/2 cup Coarse salt
- 1/2 cup White sugar
- 1 cup Brown sugar
- 1 tsp Butter
- 3 tbsp Maple syrup
Directions

1To make the brine mix the first three ingredients.

2Brine depending on the size of the fish.

3Small is good for 4 hours larger can go 8-12 hours.

4Rinse in cold water to remove brine.

5Put on paper towels and let dry.

6Mix the glaze with the last four ingredients and brush on the dry fish.

7Make sure all the ingredients for the glaze are dissolved.
