  • 1 quart Water
  • 1/2 cup Coarse salt
  • 1/2 cup White sugar
  • 1 cup Brown sugar
  • 1 tsp Butter
  • 3 tbsp Maple syrup

Directions

    To make the brine mix the first three ingredients.

    Brine depending on the size of the fish.

    Small is good for 4 hours larger can go 8-12 hours.

    Rinse in cold water to remove brine.

    Put on paper towels and let dry.

    Mix the glaze with the last four ingredients and brush on the dry fish.
  7. 7
    Make sure all the ingredients for the glaze are dissolved.
